Title: Bavarian Potato Soup

1/2 lb Bacon; diced
2 1/2 lb Potatoes; peeled & cut into
.. 1/2" cubes
2 lg Carrots; finely chopped
3 Ribs celery; finely chopped
4 Leeks; finely chopped
2 ts Salt
1/2 ts Dried marjoram
1/4 ts Pepper
Water to cover
Chopped fresh parlsey; opt.
Fry bacon in soup pot; drain all but 2 tablespoons
drippings. Add remaining ingredients except
parsley. Simmer, covered, 2 hours. Garnish with
parsley, if desired.
Makes 2 quarts.
