MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Carrot Cake Pudding
 Categories: 
      Yield: 8 Servings
 
    1/2 c  Butter; softened
  1 1/4 c  Brown sugar
      2    Eggs; beaten
    1/2 ts Baking soda
           . -=DISSOLVED IN=-
      1 tb Hot water
      1 c  Grated carrots
      1 c  Raisins
    1/2 c  Currants
      1 tb Finely chopped candied lemon
           . peel*
      1 tb Finely chopped candied
           . orange peel*
  1 3/4 c  Flour
      2 ts Baking powder
    1/2 ts Salt
    1/2 ts Cinnamon
    1/2 ts Nutmeg
    1/4 ts Allspice
      1 c  Chopped nuts
           Whipped cream; for topping
 
  *Separate Recipes.
  
  1. Preheat oven to 350. Grease mold.
  
  2. Cream butter and sugar. Add eggs and dissolved
  baking soda. Stir in all remaining ingredients
  except whipped cream until well combined. Bake for
  1 hour. Serve hot or cold, topped with whipped
  cream.
