Title: Cheese Topped Bean Soup

1/4 c Dried black beans
1/4 c Dried black eyed peas
1/4 c Dried lentils
1/4 c Dried Great Northern beans
1/4 c Dried red beans
1/4 c Dried pinto beans
6 c Water
3/4 c Finely chopped onion
1/2 c Finely chopped celery
1/2 c Chopped carrot
1/4 ts Salt
1/4 ts Pepper
1 qt Crushed tomatoes with juice
2 Cloves garlic; minced
1/3 c Chopped fresh parsley
1 tb Chili powder
2 tb Lemon juice
ds Hot sauce
1 c Shredded Montery Jack

Sort and wash beans. Cover with water to a depth
of 2" over, bring to a boil, cook 2 minutes. Turn
off heat, cover and let stand 1 hour. Drain.
Return to pot and add water, onion, celery,
carrot, salt, pepper, tomatoes, and cloves. Simmer
until beans are tender, about 2 hours. Add
parsley, chili powder, lemon juice, and hot sauce.
Cook, uncovered, 15 minutes. Top each serving with
cheese.
