Title: Chicken Vegetable Stew

6 tb Butter
2 1/4 lb Chicken; cut in serving
.. pieces
3 sm Onions; chopped
1 Carrot; chopped
2 Leeks; white part only,
.. sliced
1 ts Salt
2 ts Paprika
1/8 ts Pepper
1 c Unsweetened apple juice
1 lb Tomatoes; skinned and
.. chopped
1/2 c Finely sliced mushrooms
2 tb Chopped chives
Melt 4 tablespoons butter in large heavy bottomed
pan. Add chicken pieces and brown on all sides;
remove from pan. Brown onions and carrots. Add
remaining 2 tablespoons butter and leeks. sauté
briefly, then lay chicken pieces on top of
vegetables in pan. Sprinkle with salt, pepper and
paprika; pour on apple juice. Cover and cook over
low heat 35 minutes. Add tomatoes and mushrooms to
stew for final 10 minutes of cooking time.
Sprinkle with chopped chives and serve.
