Title: Chinese Style Crab Soup

2 tb Oil
1/2 lb Crabmeat
1/4 ts Salt
2 md Tomatoes; coarsely chopped
1 1/2 ts Chopped fresh ginger
5 c Chicken broth
2 Eggs; beaten
1 1/2 tb Vinegar
1 1/2 tb Sherry
1 1/2 tb Soy sauce
3 Scallions; sliced
sauté crabmeat, salt, tomatoes, and ginger in oil
for 5 minutes. Add chicken broth and cook over low
heat for 10 minutes. Combine eggs, vinegar,
sherry, and soy sauce in a bowl; mix well. Pour
egg mixture into soup slowly. Stir in scallions;
simmer for 3 minutes.
