12 md Parsnips (about 3/4lb.)
3/4 c Breadcrumbs
3/4 ts Salt
1 ts Pepper
Oil for frying
1. Cook parsnips in boiling water to cover until
tender; about 20 minutes; drain and cut into thin
strips.
2. Mix breadcrumbs, salt and pepper. Coat
parsnips; fry in 3" oil heated to 375°., a few at
a time, 1 minute. Drain; serve hot.
