Title: Lemony Flank Steak

1 1/2 lb Beef flank of boneless top
.. sirloin steak
1 ts Grated lemon peel
1/2 c Lemon juice
2 tb Sugar
2 tb Soy sauce
1/2 ts Dried oregano; crushed
1/4 ts Pepper; optional
Score meat by making shallow cuts at 1" intervals
diagonally across the steak in a diamond pattern;
repeat on other side of meat. Place meat in a
ziploc bag.
Stir together lemon peel, lemon juice, sugar, soy
sauce, oregano and 1/4 ts pepper. Pour over meat;
close bag. Marinate in the refrigerator for 2
hours or overnight.
Drain meat, reserving the marinade. Grill steak on
uncovered grill directly over medium coals 12-14
minutes for medium doneness, turning once and
brushing occasionally with reserved marinade.
Discard any remaining marinade. Wrap and freeze or
refrigerate half of the steak for another meal. To
serve, thinly slice meat across the grain.
