Title: Pickled Watermelon Rind

To each quart of the best vinegar, add three
pounds of the best brown sugar, four ounces of
stick cinnamon and two ounces of cloves. Bruise
the spices, tie in a muslin bag and boil with the
vinegar for five minutes. Then pour over the rind,
letting it stand twenty-four hours. Remove the
liquid and, after heating it, pour it over the
rind again and let stand another twenty-four
hours, after which boil all together for a short
time.
