Title: Sole with Mushrooms

1 c Sliced mushrooms
2 tb Minced shallots
2 tb Chopped parsley
1/2 ts Salt
Pepper to taste
1 1/2 lb Sole fillets
1/2 c Dry white wine
2 tb Flour
2 tb Butter; softened
2 tb To 4 heavy whipping cream
Preheat oven to 350°.
Mix mushrooms, shallots, parsley, salt and pepper
together in bowl. Spread mixture in bottom of
greased, shallow baking dish. Place fish fillets
over mushrooms. Add enough wine to cover bottom of
dish. Bring to a simmer on stovetop. Cover baking
dish. Mix flour and butter together. Boil pan
juices from fish until reduced by half. Stir
butter-flour mixture into reduced pan juices; cook
over low heat, stirring constantly, until
thickened. Stir in cream and any juices that have
drained from fish onto serving platter.
