Title: Whole Wheat Zucchini Bread

3/4 c Whole wheat flour
3/4 c Flour
1 1/2 ts Baking powder
1/2 ts Baking soda
1 ts Ground cinnamon
1/2 ts Ground nutmeg
1 Egg
1/4 c Sugar
1 ts Vanilla
2 tb Butter; melted
2 ts Butter; melted
1 1/2 c Finely shredded; unpeeled
.. zucchini
1/2 c Raisins
Preheat oven to 350°.
Combine flours, baking powder, baking soda, and
spices. In another bowl, combine egg, sugar,
vanilla, and butter until well blended. Add
zucchini and raisins.
Combine wet and dry mixtures together until
moistened.
Place in a 4X8 nonstick loaf pan or one that has
been sprayed with a nonstick cooking spray.
Bake 50 minutes, or until toothpick comes out
clean. Cool in pan 10 minutes, then turn out onto
rack to finish cooling.
