Title: Beef Stew

2 tb Fat
1 Onion; chopped
1 1/2 lb Stew meat; cubed
1 qt Water
4 Potatoes; quartered
3 Carrots; sliced
1 Stalk celery
2 tb To 3 flour

1/2 c Water
Salt and pepper to taste

1 c Sugar
1 tb Water
1 c Water

Soup:
Melt fat in heavy pot, add onion and fry until
light brown. Remove from pot; add meat and fry
until well browned. Add water and onion; cover and
simmer until meat is tender. About 1/2 hour before
serving, add potatoes, carrots and celery. Just
before serving, mix flour and water and stir into
stew. Add salt, pepper and caramel to color; stir
to blend and serve hot.
Caramel:
Put sugar and 1 tablespoon water into a porcelain
kettle, cook and stir constantly till a bright
brown color. Add water and salt, let boil a few
more minutes. Cool, strain and bottle; cork
tightly. always ready for coloring soups.
