      Title: Cheesy Oven Fried Chicken

      Yield: 4 Servings
 
      4 lg Chicken quarters
      1 tb Flour
           Salt and pepper to taste
    1/2 ts Dry mustard
      1    Egg; beaten
    1/4 c  Soft white bread crumbs
    1/4 c  Grated cheddar cheese
      4 tb Butter
 
  Preheat oven to 400°.
  
  Coat chicken in flour seasoned with salt, pepper
  and dry mustard. Brush chicken with beaten egg and
  roll in a mixture of bread crumbs and cheese.
  Place in casserole dish and dot with small pieces
  of butter. Bake 40 minutes or until golden brown
  and tender.
