1 lb Boned and skinned chicken
.. breasts
Flour
4 Eggs; beaten
1/4 ts Salt
1/8 ts Pepper
4 ts Butter; about
1/2 c Heavy cream
1/4 c Sherry
Pound chicken breasts until thin. Coat with flour.
Dip into eggs beaten with salt and pepper.
Melt butter in heavy skillet, brown chicken on
both sides. Add the heavy cream, turning chicken
to coat. Add sherry; simmer 1 minute. Serve
immediately.
Makes 4 servings.
