      Title: Chicken Loaf with Mushroom Sauce

MMMMM----------------------------LOAF------------------
      1    Hen; cooked & diced
      2 c  Bread crumbs
      2 c  Cooked rice
  1 1/2 ts Salt
    1/2 c  Chopped pimento
      3 c  Chicken broth
      4    Eggs; well beaten
      1 c  Diced celery
      1 sm Onion; grated

MMMMM---------------------------SAUCE-----------------
      3 tb Butter
      3 tb Flour
      2 tb Grated onion
  1 1/2 c  Chicken broth
    1/2 lb Mushrooms
           Salt to taste
           Pepper to taste
 
  Preheat oven to 350°.
  
  Combine loaf ingredients; bake 45 minutes.
  
  Sauce:
  
  Cook butter, flour and onion until lightly
  browned; stir in broth and mushrooms. Cook,
  stirring, until slightly thickened. Season with
  salt & pepper. Serve with chicken loaf.
