      Title: Chicken Nectarine Salad

      Yield: 4 Servings
 
      1 c  Shredded cooked chicken
    1/4 c  Grated zucchini
    1/4 c  Grated carrot
      2 tb Finely chopped scallion
      2 ts Tarragon wine vinegar
      1 ts Salad oil
    1/4 ts Seasoned salt
      2    Fresh nectarines
      4 tb Mayonnaise
           Crisp lettuce
 
  Toss chicken, vegetables, vinegar, oil and salt
  together; chill. When ready to serve, halve
  nectarines. Remove pit and cut into thin slices.
  Add nectarine slices and mayonnaise to chicken
  mixture. Line salad bowls with lettuce. Spoon
  mixture on top and serve.
