Title: Country Potato Pancakes

Yield: 24 Servings
2 lb Potatoes; peeled, finely
.. grated and drained
2 Eggs; slightly beaten
1 tb Grated onion
2 tb Flour
1 ts Salt
1/2 ts Baking powder
Oil for frying
Combine all ingredients; fry in hot oil until
browned on both sides, flattening as needed.
Note: I grew up on these..... and had them with
either applesauce or sour cream. I use a lot more
onion and salt them a lot......for six of us I
don't think it was unusual for Mom to go through
10 lbs. of taters and using 3 or 4 good sized
onions. I can also remember scraping my knuckles
on the grater, still do when I make them .
