Title: Fillet of Sole Au Gratin

1 1/2 lb Sole fillets
2 tb Chopped onion
2 tb Chopped celery
Salt and pepper to taste
2 tb Water
2 tb Lemon juice
2 tb Butter
2 tb Flour
1 c Milk
1/2 c Grated American cheese
Preheat oven to 450°.
Place fish in a baking pan; sprinkle with mixture
of onion, celery, salt, and pepper. Add water and
lemon juice; bake for 10 minutes.
Melt butter in saucepan, stir in flour. Add milk;
cook over medium heat, stirring constantly, until
sauce thickens. Season with salt and pepper. Set
aside 2 tb. cheese, stir remaining cheese into
sauce until it melts. Pour over fish. Sprinkle
fish with remaining cheese; bake 10-15 minutes.
