1 lb White fish backbones and
.. skins
1 Onion; sliced
2 sm Carrots; sliced
2 Stalks celery; sliced
6 Sprigs parsley
1 Bay leaf
1 Sprig fresh thyme

1/2 ts Dried thyme
6 c Water
1 1/2 c White wine or cider;
.. optional
Salt and pepper to taste
Bring all ingredients to a boil; simmer 30-40
minutes, until liquid is reduced and well
flavored. Strain and cool. Use at once or freeze
for later use.
