Title: Flounder in Wine Sauce

2 lb Flounder fillets; skinned
2 ts Salt
Pepper to taste
3 Tomatoes; sliced
2 tb Flour
2 tb Butter; melted
1/2 c Milk
1/3 c Dry white wine
1/2 ts Basil
1/4 c Chopped parsley
Preheat oven to 350°.
Sprinkle fish on both sides with 1 1/2 tsp. salt
and pepper. Place in single layer in greased
baking dish. Arrange tomatoes over fish. Sprinkle
with 1/2 tsp salt and dash pepper. Blend flour
with butter in saucepan; gradually add milk. Cook
over medium heat, stirring constantly, until sauce
is thick and smooth. Remove pan from heat; stir in
wine and basil. Pour wine sauce over tomatoes.
Bake 25-30 minutes, or until fish flakes when
tested with fork. Sprinkle with parsley, serve at
once.
