MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Flounder with Oyster Sauce
 Categories: 
      Yield: 4 Servings
 
      1 sm Onion; chopped
      1    Carrot; peeled & chopped
  1 1/2 c  Dry white wine
           Salt to taste
      6    Peppercorns
      1    Bay leaf
  1 1/2 lb Flounder fillets
      2 tb Butter
      2 tb Flour
    1/2 c  Heavy whipping cream
           Paprika to taste
      1 pt Oysters; drained
     10    Seedless green grapes
 
  Place onion and carrot in saucepan. Add wine,
  salt, peppercorns, and bay leaf. Simmer 15
  minutes. Add fish and simmer 7-10 minutes. Remove
  fish and arrange in shallow casserole dish. Strain
  cooking liquid; if there is less than 1 cup, add
  enough wine to make 1 cup.
  
  Preheat oven to 350°.
  
  To make sauce, melt butter in separate saucepan.
  Stir in flour and stock. Add cream and paprika;
  cook over low heat, stirring constantly, until
  heated thoroughly. Pour sauce over fish in
  casserole. Arrange grapes on top; cover and bake
  20 minutes. Remove from oven, serve with baked
  potatoes.
