Title: Fresh Blueberry Cake

5 tb Butter
2 1/4 c Flour
1 c Sugar
2 Eggs
3/4 c Milk
2 ts Baking powder
1 ts Vanilla
1 ts Cinnamon
2 c Fresh blueberries; sprinkled
.. with a little sugar
1. Preheat oven to 450°. Grease a 9" springform
pan.
2. Cut 4 tablespoons butter into flour and sugar
until crumbs form. Measure out 3/4 cup for cake;
set rest aside.
3. Add eggs, milk, baking powder and vanilla to
3/4 cup crumbs. Beat until smooth and not grainy.
4. Pour batter into pan; spread around sides of
pan, completely lining pan and forming a hollow in
the center. Pour berries into hollow.
5. Add remaining 1 tablespoon butter to remaining
crumbs; work in until crumbly. Sprinkle on
berries. Bake 5 minutes; reduce heat to 350° and
bake another 20 minutes. Serve warm or cold.
Serves 8 to 10.
