Title: Fresh Vegetable Quiche

5 sl Whole wheat toast
2 tb Corn oil
1 c Sliced onion
1 Clove garlic; minced
5 c Fresh vegetables*
Water
3 Eggs
1/2 c Ricotta cheese
1/2 ts Salt
1/4 ts White pepper
1/2 ts Thyme
1/2 ts Marhoram
1/2 ts Basil
1/2 c Grated Swiss cheese
2 tb Grated Parmesan cheese
*Carrots, broccoli, cauliflower and mushrooms, cut
in pieces.
Grease an 8 or 9" square baking dish; line with
bread slices. Saute onion and garlic in oil until
golden. Add vegetables and stir fry until
crisp-tender. Add 2 tb water; cover and steam 2
minutes. Beat eggs. Add ricotta, salt, white
pepper, thyme, marjoram, and basil; mix well.
Combine with vegetables and put in baking dish.
Sprinkle top evenly with cheeses and bake,
uncovered, in a preheated 325° oven 35-40 minutes
until set in center.
Note: Can be made ahead, refrigerated and reheated
at 325° until warmed through.
