Title: Fried Butterfly Shrimp

2 lb Large shrimp; cleaned,
.. leaving tail intact
1 c Sifted flour
1/2 ts Sugar
pn Curry powder
1 Egg
1 c Water
2 ts Oil
1/2 ts Salt
Oil for frying
Slit shrimp down back and spread apart butterfly
fashion. Pull tail thru slit. Combine flour,
sugar, and curry powder. Add egg, water, and 2 tsp
oil; beat well. Dip shrimp in batter. Heat oil to
375° in deep skillet or deep fryer. Fry, a few at a
time, until golden brown. Drain on paper towels.
