Lard or butter
1 lg Fryer
1 sm Onion; sliced
Flour
Salt and pepper
Allspice
Water
Put quite a bit of butter and/or lard in your
frying pan or roaster. Brown the onion in the fat.
Cut up the chicken; roll each piece in flour.
Brown on both sides; season. Add a little water,
cover and bake, turning once or twice to keep it
from getting dry. This will be done in about 1 1/2
hours. The allspice really improves the flavor of
both the chicken and the gravy.
