Title: Golden Squash Rolls

2 pk Yeast
1 1/2 c Warm water
1/3 c Sugar
2 ts Salt
2 Eggs
1 c Mashed winter squash
7 c .. to 7 1/2 flour
2/3 c Butter; softened
Proof yeast in water with a little of the sugar.
Add sugar, salt, eggs, squash and 3 1/2 cups
flour. Beat in melted butter; stir in enough flour
to make a soft dough. Knead on floured surface
until smooth and elastic. Place in greased bowl;
turn to grease top. Cover and refrigerate 2 to 4
hours (or up to 3 days) Punch down; divide in
half. Roll each half into a 16" circle; cut into
16 wedges. Roll into crescent shape; place on
greased cookie sheets. Cover and let rise until
almost doubled, about 1 hour. Bake at 400°. until
golden brown, 15 to 20 mintues.
