1/2 lb Veal
1/2 lb Beef round
1/2 lb Pork
1 tb Paprika
2 Pair pork kidneys
4 tb Fat
2 Onions; sliced
1 Green pepper; shredded
1 c Tomatoes
1 Sprig parsley
4 Potatoes; peeled
Salt and pepper
1 tb Flour; optional
1 tb Butter; optional
Cut meat into cubes and mix with paprika. Soak
kidneys in cold water for 1 hour. Drain. Plunge in
boiling water 1 minute. Chop up and discard tough
parts. Fry onion and green pepper in fat, add meat
and kidneys. Brown all in fat. Add tomatoes and
parsley. Barely cover with boiling water, cover
pot and simmer for an hour. Add potatoes, salt and
pepper and more water if needed. Simmer 30
minutes. If you wish, thicken liquid with 1
tablespoon flour rubbed into 1 tablespoon butter
and cook until stew boils up.
