1 1/2 lb Lean stew beef; cut into 1"
.. cubes
2 lb Beef soup bones
1 qt Fresh tomatoes; peeled and
.. chopped
1 md Onion; chopped
4 lg Potatoes; peeled & diced
6 Carrots; sliced
3 Ribs celery; sliced
3 c Chopped cabbage
3 tb Worcestershire sauce
2 ts To 4 salt
1/2 ts Pepper
3 tb Minced fresh parsley
Simmer stew beef and bones in water to cover in a
covered pan until meat is tender, about 2 hours.
Strain, remove meat from bones; discard bones. Add
all remaining ingredients but parsley; simmer
covered until vegetables are tender. Sprinkle with
parsley.
Makes about 4 quarts.
