Title: Mashed Potato Rolls

1 pk Yeast
1/2 c Warm water
1 c Mashed potatoes
1/2 c Sugar
2 Eggs
1 ts Salt
2/3 c Oil
1 c Milk; scalded
5 c Flour (up to 6)
Proof yeast in warm water and a bit of the sugar.
Mix potatoes, sugar, eggs, salt, oil and milk.
Stir in yeast and enough flour to make a stiff
dough. Place in greased bowl and cover. Can be
stored up to 4 days. Punch down and knead slightly.
Shape and let rise until doubled; bake 8 minutes
at 400°.
Makes 3 to 4 dozen.
