MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Pb&j Thumbprint Cookies
 Categories: 
      Yield: 40 Servings
 
      1 c  Peanut butter
    1/2 c  Butter; at room temperature
      1 c  Packed brown sugar
      2 lg Eggs; separated
      1 ts Vanilla
  1 1/2 c  Flour
      1 c  Unsalted dry roasted nuts;
           .. chopped
    1/2 c  Jelly or jam
 
  Beat PB, butter and sugar in a large bowl until
  smooth and creamy. Beat in egg yolks and vanilla.
  Gradually beat in flour until well blended. Cover
  and refrigerate 1 hour or until firm. Heat oven to
  350°. Have cookie sheets ready. Whisk egg whites
  in a small bowl until foamy. Put nuts on waxed
  paper (I use a paper plate) Shape tablespoons of
  dough into balls about 1 1/4". Dip in egg whites,
  then roll in nuts to cover. Place 1" apart on
  ungreased cookie sheet. Make an indentation with
  your thumb taking care not to crack cookies too
  much. Bake 12-15 minutes until cookie looks dry
  and is firm. Remove to rack, cool completely.
  Store in airtight container at room temperature up
  to 3 weeks. Spoon jelly into center of each just
  before serving.
  
  Gift suggestion: Package these up with some
  homemade jelly and some pretty teacups, teabags,
  and napkins.
