3 lb To 4 beef roast
Salt pork
1 Onion; sliced
Flour
3 c Water
2 Carrots
1/2 Bay leaf
1/2 ts Peppercorns
Wipe off the meat with a damp cloth. Fry salt pork
and onion together until onion is soft. Sprinkle
roast with flour and brown on all sides in fat.
Put meat, on a rack, in a Dutch oven; rinse out
frying pan and pour liquid over roast. Add
remaining ingredients, cover tightly and bake
slowly for about 3 hours. Make gravy from pan
drippings.
