Title: Quick Cassoulet

2 Boneless skinless chicken
Breast halves, cut in 1"
.. pieces
1 c Chopped carrots
1/2 c Chopped onion
1/2 c Chopped celery
1/2 ts Dried thyme leaves
1/4 ts Pepper
2 Cloves garlic; minced
1/2 pt Tomato sauce
2 pt Great Northern Beans;
.. drained
4 oz Cooked turkey ham; cut in
.. 3/4" pieces
2 tb Chopped fresh parsley
In large nonstick skillet over medium-high heat,
combine chicken, carrots, onion and celery. Cook
and stir 3-5 minutes or until chicken is no longer
pink. Add thyme, pepper, garlic and tomato sauce.
Reduce heat, cover and simmer 5-7 minutes or until
vegetables are tender. Stir in beans and turkey
ham; cook until thoroughly heated. Just before
serving, sprinkle with parsley.
5 (1 cup) servings.
