MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Red Snapper in Foil
 Categories: 
      Yield: 4 Servings
 
      4 lb Red snapper; cleaned and
           .. boned
      2 tb Corn oil
           Salt and pepper to taste
    1/4 c  Butter
    1/2 c  Chopped celery
    1/4 c  Finely chopped green pepper
      2    Scallions; chopped
      1 c  Bread crumbs
      2 tb Chopped parsley
    1/4 c  Coarsely chopped toasted
           .. almonds
      1 lg Tomato; skinned and sliced
      6    Thin slices onion
      6    Thin slices orange
      6    Thin slices lime
    1/2    Lime; juice of
 
  Preheat broiler.
  
  Rub fish lightly with corn oil. Sprinkle inside
  and out with salt and pepper. Sauté celery, green
  pepper and scallions 3 minutes. Add bread crumbs,
  parsley and almonds. Press mixture together, then
  stuff fish. Fasten closed with toothpicks. Brush a
  large sheet of aluminum foil lightly with oil;
  place fish on it and arrange tomato, onion, orange
  and lime slices down the length of the fish,
  overlapping. Seal foil tightly and cook 30-40
  minutes.
