Title: Rhubarb Coconut Cookies

1/2 c Shortening
1 1/3 c Packed brown sugar
1 Egg
2 c Flour
1/2 ts Baking soda
1 ts Cinnamon
1/2 ts Cloves
1/2 ts Nutmeg
1/2 ts Salt
1/4 c Milk
1 c Finely diced rhubarb
1 c Chopped pecans or walnuts
1 c Raisins
1/2 c Coconut
Preheat oven to 375°. Grease cookie sheets.
Cream shortening and brown sugar. Beat in egg. Mix
dry ingreients; add to creamed mixture alternately
with milk. Stir in rhubarb, nuts, raisins and
coconut. Drop by tablespoons onto cookie sheets;
bake 12 to 15 minutes or until golden. Cool on
racks.
