Title: Smothered Quail

12 Quail
12 tb Buttter
3 tb Flour
2 1/2 c Chicken broth
1/2 c Sherry
Salt; to taste
Pepper; to taste
Cooked rice
Brown quail in butter; transfer to slow cooker.
Stir flour into skillet, mixing well. Add chicken
broth, sherry, salt and pepper slowly. when well
blended, pour over quail. Cover and cook on high
about 5 hours. Serve with rice.
May also be baked at 350°, covered, about an hour.
Makes 12 servings.
