Title: Sole Fillets with Shrimp

2 tb Vegetable oil
3 tb Butter
4 Sole fillets
Salt and pepper to taste
1 c Flour
10 Shrimp; cleaned
1/2 lb Mushrooms; sliced
1 tb Chopped parsley
1/2 Lemon; juice of
Heat oil and 2 tb butter in large fry pan over low
heat. Sprinkle fish with salt and pepper; coat
with flour. Fry over low heat 3 minutes. turn and
cook another 3 minutes or until done. Remove to
serving platter; keep warm. Add shrimp, mushrooms
and parsley to same fry pan. Cook for 3 minutes,
shaking pan frequently. Stir in remaining butter,
lemon juice, salt and pepper. Pour over fish and
serve.
