MMMMM----- Recipe via Meal-Master (tm) v8.05
      Title: Spiced Rhubarb Bread
      Yield: 2 Loaves
  1 1/2 c  Packed brown sugar
    2/3 c  Oil
      1    Egg
      1 c  Buttermilk
      1 ts Vanilla
      1 ts Baking soda
  2 1/2 c  Flour
      1 ts Salt
      1 ts Cinnamon
  1 1/2 c  Diced rhubarb
    1/2 c  Chopped nuts; optional

    1/2 c  Sugar
      1 tb Butter; melted
      1 ts Cinnamon
  1. Preheat oven to 350. Grease and flour 2 loaf
  2. Beat brown sugar, oil and egg. Stir in
  buttermilk, vanilla and baking soda; mix well. Mix
  flour, salt and cinnamon; mix into wet
  ingredients. Fold in rhubarb and nuts, if using.
  Pour into pans. Combine topping ingredients;
  sprinkle over top of loaves. Bake until bread
  tests done, about an hour.
