Title: Steak with Honeyed Red Onions

1/3 c Red wine vinegar
3 tb Honey
1/2 ts Dried thyme, crushed
1 lg Red onion; thinly sliced
1 lb Top loin or tenderloin; 1"
.. thick
1/2 ts Cracked black pepper
2 tb Snipped parsley
Stir together vinegar, honey and thyme in a bowl.
Separate onion slices into rings; add to vinegar
mixture. Let stand while preparing meat; stir
occasionally.
Meanwhile, trim fat from meat; cut into serving
size pieces. sprinkle both sides of steak with
cracked pepper, pressing pepper into the surface
of the meat.
Cook steaks in a large nonstick skillet over
medium high heat for 10 minutes, turning once.
Remove steaks from skillet.
Add onion mixture to drippings in the skillet.
Cook over medium heat 3-4 minutes, or till onions
are just crisp tender, stirring occasionally.
Return steaks and any juices to skillet. Reduce
heat to medium low. cook, uncovered, 3-4 minutes
or till steak is desired doneness and liquid is is
slightly reduced, occasionally spooning cooking
liquid over steaks. Transfer steaks to serving
plates. Stir parsley into onion mixture. Spoon
onion mixture over steaks.
