Title: Tomato Mushroom Soup

1 lb Mushrooms; sliced
6 tb Butter; divided
2 md Onions; minced
1 Clove garlic; minced
2 Carrots; chopped
3 Ribs celery; finely chopped
3 tb Flour
8 c Beef broth
2 Tomatoes; peeled, seeded &
.. chopped
1 pt Tomato sauce
1 ts Salt
1/2 ts Pepper
3 tb Minced fresh parsley
Sour cream; optional
sauté mushrooms in soup pot in 4 tablespoons
butter until tender. Remove mushrooms; set aside.
sauté onions, garlic, carrots and celery in
remaining butter until vegetables are tender. Stir
in flour; pour in broth, tomatoes, tomato sauce,
salt, pepper and half of the reserved mushrooms.
Cover; simmer about 30 minutes. Stir in parsley
and remaining reserved mushrooms; heat through.
Garnish with sour cream, if desired.
Makes about 3 quarts.
