3 c Chopped watercress
4 tb Butter
2 tb Chopped onion
1 1/4 ts Salt
1 c Whipped cream
4 c Milk
2 tb Flour
1 ts Beef extract
Cayenne
Worcestershire sauce
Cook cress, butter and onion together five
minutes; add flour and seasonings. When smooth add
milk in which extract has been mixed, cook twenty
minutes, strain, serve, and garnish with whipped
cream.
